Baking and History

Baking originated over 12,500 years ago, beginning when prehistoric humans mixed wild grains with water and cooked the paste on hot rocks. Ancient Egyptians revolutionized the craft around 2600 BCE by inventing the first enclosed ovens and utilizing yeast to create leavened bread.

Since then, the craft has evolved from crude pastes to a global science and art.

Antiquity & The Roman Empire

  • Ancient Greece: Around 600 BCE, the Greeks refined baking techniques and developed closed, wood-fired ovens, which allowed for better heat regulation and dough rising.
  • Ancient Rome: Baking transitioned into a respected trade and profession. The Romans established the first professional bakers’ guild, the pastillarium, around 300 BCE, transforming bread-making into an industry.

The Middle Ages

  • Guilds & Regulations: Following the fall of Rome, baking as a profession declined but was revived in the later Middle Ages. French bakers and pastry chefs formed strict guilds to protect and regulate the craft.
  • Bread as a Staple: Baking specialized goods, including pastries and richer breads, remained primarily a luxury for nobility, as common households lacked the specialized ovens needed to bake properly.

The Renaissance & Globalization

  • New Ingredients: The European exploration of the Americas in 1492 introduced new staples like refined sugar and cacao to the Old World, revolutionizing European pastry making.
